  • 2 small zucchinis, sliced 1/8-inch thick
  • 1/4 teaspoon kosher salt
  • 2 teaspoons olive oil
  • 1 tablespoon rosemary
  • 1/2 teaspoon garlic powder
  • pepper, to taste
  • 1/2 cup parmesan cheese

Directions

  1. Wash and dry the produce. On a cutting board, using a chef's knife cut two small zucchinis into 1/8-inch thick rounds.

  2. Place the zucchini rounds into a medium bowl, and toss with 1/2 teaspoon kosher salt. Set aside for 5 minutes while the salt draws moisture from the zucchini.

  3. After 5 minutes, empty the zucchini onto a cutting board and pat dry with paper towels. Place the zucchini back in the bowl and toss with olive oil.

  4. Sprinkle the zucchini with rosemary, garlic powder, pepper and, parmesan cheese. Stir to coat.

  5. Place the zucchini rounds in the air fryer in a single layer. Do not overcrowd. Air fry the zucchini chips at 350 degrees for 10-15 minutes, or until crispy, tossing halfway.

If your zucchini chips are soggy you may have skipped an essential step in the recipe in hopes of saving a little bit of time. Zucchini has a high water content (about 94 percent). Tossing zucchini rounds in salt helps draw out some of that moisture. Skipping this step could result in soggy zucchini chips. If kosher salt is not on hand, table salt will do.

Can I Make Air Fryer Zucchini Chips in the Oven?

Sure. If you don't own an air fryer or you're preparing zucchini chips for a larger crowd, an air fryer may not be ideal. To bake instead, place the zucchini rounds on a greased baking sheet and bake at 350 degrees for 10-15 minutes or until crispy, tossing halfway through.
