  • 1 head cauliflower, about 8 cups (cut into bite-sized florets)
  • 1/4 cup olive oil
  • salt and pepper, to taste
  • 1 cup heavy cream
  • 2 ounces cream cheese (full fat), softened
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/4 teaspoon garlic powder

Directions

  1. Preheat the oven to 450 degrees.

  2. Cut the cauliflower into bite-sized florets, about 8 cups. Rinse the florets in a colander and then dry.
